This is a really delicious recipe, veganized and adapted from The Joy of Cooking.

Ingredients
1 1/3 cup water
1 cup vegetable broth
2 tsp baking powder
1/2 tsp salt
1/3 cup vegetable oil
3 cups cornmeal
2 vegan "eggs" made with egg replacer
1 recipe of Black Beans for filling
Recipe Steps
Bring water and broth to a boil. Cover and remove from heat.
Whisk baking powder and salt together in a large bowl.
Whisk in vegetable oil, cornmeal, and reserved stock mixture.
Let batter stand for 5 minutes.
Whisk in vegan eggs.
Preheat oven to 400 degrees. Grease a 13 x 9 inch baking pan.
Remove 1 1/2 cups cornmeal batter and reserve.
Using a rubber spatula, spread remaining batter over bottom and up sides of pan.
Gently spoon in black bean filling.
Stir 1/4 cup hot water into reserved batter.
Spread batter in a thin, even layer over the top of the pie.
Bake about 40-50 minutes.
Let stand for 15 minutes before serving.
Serve with salsa, chopped avocado, cooked brown rice, and chopped cilantro.
