Delicious vegan muffins that can be customized with your own add-ins!!!

Ingredients
2 1/2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/2 cup light brown sugar
2 vegan eggs
1 1/3 cup non-dairy milk (plus 1 tsp apple cider vinegar)
1/3 cup canola oil
1 1/2 tsp vanilla extract
Optional add-ins: 1 cup fresh or dried fruit, 1 cup chocolate chips, 1/2 cup nuts, etc.
Recipe Steps
Preheat oven to 375 degrees.
Mix dry ingredients in one bowl and wet ingredients in another bowl.
Combine with a few swift strokes.
Scoop batter into muffin tins.
Bake in upper third of oven, approximately 20 minutes.
Let muffins cool in tins 5 minutes.
Remove muffins to wire cooking rack and let cool completely.
