Ingredients
1/2 cup vegan margarine, melted
2 tsp vanilla extract, divided
1/2 cup rolled oats
1/2 cup raw natural coconut flakes
1 cup flour
1/2 cup light brown sugar
1/2 tsp ground cinnamon
1/4 tsp salt
1 jar (8 ounces) fig preserves
Recipe Steps
Preheat oven to 375 degrees. Grease an 8 inch square nonstick baking pan.
Combine butter and 1 tsp vanilla.
Stir in the flour, oats, coconut flakes, brown sugar, cinnamon, and salt.
Press 1 cup of the mixture into the pan firmly.
Whisk the remaining 1 tsp vanilla into the fig preserves.
Spread evenly over the crust.
Spread the remaining crust mixture over the top of the preserves and pat firmly.
Bake 20-25 minutes or until the top is browned.
Let cool 20 minutes.
Cut into 16 squares and serve at room temperature.
