Uncle Jack Carrot Salad

Ingredients
SALAD
1 lb carrots, cut into large pieces
1 red onion, sliced
5 ounces baby spinach
1/4 recipe cranberry sauce (from bag)
1/2 avocado, chopped
2 mandarin oranges or clementines
Pistachio nuts, for garnish
DRESSING
4 tbsp stone ground mustard
1 tbsp maple syrup
1 tbsp olive oil
2 tbsp water
1/4 tsp roasted garlic powder
Salt and pepper, to taste
Recipe Steps
Preheat the oven to 350F.
Line a large baking pan or cookie sheet with foil.
Put carrots and onions on prepared pan. Drizzle with olive oil.
Bake for 55-60 minutes until carrots are soft and browned around the edges.
Assemble the salad by tossing together the greens, cranberry sauce, avocado, and oranges.
Top with carrots and onions. Garnish with pistachios.
Make the dressing by whisking together the mustard, syrup, oil, water, garlic powder, salt and pepper until smooth.
Dress the salad immediately before serving.
