Toasted Coconut Banana Muffins

Ingredients
2 cups white whole wheat flour (freshly ground)
1 tbsp baking powder
1/2 tsp salt
1 cup toasted coconut flakes, unsweetened
1/2 cup brown sugar (scant; use mix of dark brown and turbinado sugar)
1 vegan egg
1 cup mashed banana
1/2 cup vegan almond milk (unsweetened)
1/3 cup canola oil (scant)
1 tsp vanilla extract
Crumb topping (optional)
1/3 cup unsweetened coconut flakes
2 tbsp brown sugar (scant)
1 1/2 tbsp flour
1 1/2 tbsp melted vegan butter
Recipe Steps
Preheat oven to 400 degrees.
Mix dry ingredients together in a large bowl.
In another bowl, mix together sugar, egg, banana, milk, oil, and vanilla extract.
Mix wet and dry ingredients together until just blended.
Divide among 12 muffin cups.
Mix together all crumb topping ingredients. Top muffins with crumb topping, if using.
Bake for 19-20 minutes.
Cool for 10 minutes and then remove from pans.
Finish cooling on wire rack.
