Thai Corn Coconut Soup

Ingredients
1/2 cup shallots, chopped
5-6 garlic cloves, chopped
1 2-inch piece of ginger, chopped
1/4 green pepper, chopped (or other mild pepper)
1 carrot, chopped
4 medium red potatoes, chopped
4 ears corn, cut off cob
1 1-lb bag of frozen corn
3-4 cups vegetable broth
1 15-oz can light coconut milk
1 to 2 tbsp red curry paste
2-3 cups finely chopped greens
1 lime
Salt, to taste
Recipe Steps
Saute shallots, garlic, ginger, and carrots in large pot until slightly softened.
Add green pepper, potatoes, and corn. Continue to cook for a few minutes.
Add broth, coconut milk, and red curry paste.
Bring to boil. Lower heat and simmer until vegetables are fully cooked.
Roughly blend soup with an immersion blender.
Add lime juice and salt, to taste.
Garnish with chopped tomato, scallions, cilantro, Thai basil, honey roasted peanuts, cooked rice or other grains, seaweed snacks, etc.
