Ingredients
1 can chickpeas or 2 cups edamame
1 large bag baby spinach
1 cup cooked quinoa
1 cup strawberries
1 cucumber
1 lb asparagus, steamed or roasted
1/2 cup candied walnuts
Optional additions-marinated tofu feta, avocado, red onions, olives, etc
Dressing-1 recipe Penzey's Country French (1 Tbsp dressing mix, 3 Tbsp water, 1 Tbsp oil, 2 Tbsp white balsamic, 1 Tbsp mustard)
Recipe Steps
Roast or steam the asparagus.
Make the salad dressing.
Add all salad ingredients to large bowl.
Toss with dressing.
Serve immediately.
