Ingredients
2 cups flour
1/2 tsp baking powder
1/4 tsp salt
16 Tbsp butter
1 cup sugar
1 Tbsp brown sugar
1 vegan egg
1 1/2 tsp vanilla extract
Recipe Steps
Heat oven to 375 degrees.
Adjust oven racks to upper and lower middle positions.
Line 2 baking sheets with parchment paper.
Beat butter, sugar, and brown sugar for 3 minutes.
Add egg and vanilla, beat 30 seconds.
Mix in dry ingredients.
Roll tablespoons of dough into 1 1/2 inch balls.
Space about 2 inches apart on baking sheets.
Flatten dough balls with bottom of drinking glass so they are about 3/4 inch thick.
Bake cookies 15 to 18 minutes.
Reverse position of cookie sheets halfway through baking time.
Cool 3 minutes on sheets.
Optional-can roll dough balls in granulated sugar before baking.
