Smokehouse Chickpeas and Greens Salad

Ingredients
Roasted BBQ Chickpeas
2 Tbsp olive oil
1 14-ounce can chickpeas, drained and rinsed
1 Tbsp tamari
1 heaping Tbsp tomato paste
1 Tbsp maple syrup
1 tsp liquid smoke
2 Tbsp nutritional yeast
Salad
6 cups baby spinach
1 red onion, thinly sliced
1/2 pint cherry tomatoes, sliced in half
1 large, ripe avocado, diced
1/2 cup sliced carrot
Salt and pepper to taste
Smoked Paprika Dressing
2 Tbsp apple cider vinegar
1 Tbsp olive oil
1 shallot, minced
1 Tbsp maple syrup
1 1/2 tsp smoked paprika
1/2 tsp smoked salt of regular salt
Recipe Steps
Preheat a large skillet over medium high heat.
Pour in olive oil.
Add the chickpeas and fry for about 6 minutes.
Whisk together tamari, tomato paste, maple syrup, and liquid smoke.
Pour over chickpeas.
Reduce heat to low, and simmer for 4 minutes.
Turn off the heat and cover to keep warm.
Tear the greens into bite size pieces.
Transfer to a large bowl and add remaining salad ingredients.
Whisk together the salad dressing ingredients and toss with salad.
Sprinkle nutritional yeast over the chickpeas and stir to coat.
Top the salad with the chickpeas and salt and pepper to taste.
Serve immediately.
