Delicious pasta recipe adapted from Chloe's Vegan Italian Kitchen

Ingredients
1 lb penne
1 cup sun dried tomatoes, chopped
3 T olive oil
1/2 cup flour
3 1/2 cups almond milk
1/4 cup nutritional yeast
2 T tomato paste
2 tsp sea salt
1 tsp garlic powder
1 tsp dried basil
Pinch of crushed red pepper
Recipe Steps
Cook pasta according to package directions.
Right before draining add 1/2 cup sun dried tomatoes to pot.
Drain and return to pot.
Make a roux by whisking oil and flour in a saucepan.
Heat for 3-5 minutes.
Add almond milk, nutritional yeast, tomato pasta, salt, garlic powder, basil, and red pepper flakes.
Bring to a boil, whisking often.
Reduce heat to low and add remaining 1/2 cup sun dried tomatoes.
Transfer to a blender and blend until smooth.
Toss with pasta and serve.
