Ingredients
1 Tbsp olive oil
1 package vegan sausage (Field Roast-Smoked Apple Sage)
4 cloves garlic, chopped
1 onion, chopped
1 bay leaf
4-6 sage leaves, about 2 Tbsp
1 cup white wine
1 cup vegetable broth
1 cup canned pumpkin
1/2 cup soymilk
1 pound pasta of choice, cooked
Recipe Steps
Brown vegan sausage in skillet.
Remove sausage.
Add garlic and onion to pan.
Saute 3 to 5 minutes.
Add bay leaf, sage, and wine to pan.
Reduce wine by half.
Add broth and pumpkin, bring to a bubble.
Return sausage to pan.
Reduce heat, and then stir in soymilk.
Season with salt and pepper. (optional seasonings-nutmeg and cinnamon)
Simmer 5 to 10 minutes to thicken sauce.
Mix with pasta.
Toss over low heat for 1 minute.
Serve immediately.
