Ingredients
1 T olive oil
1 medium yellow onion, chopped
2-3 cloves garlic, minced
1 cup long grain white rice
1/2 cup orzo
1/2 tsp salt
1/2 tsp black pepper
1/4 tsp turmeric
2 3/4 cups water
1 cup green peas, fresh or frozen
1/4 cup chopped roasted red pepper
2 T chopped parsley
Recipe Steps
In a medium saucepan, heat the oil over medium heat.
Add the onion and garlic and cook, stirring, for 4 minutes.
Stir in the rice, orzo, salt, pepper, and turmeric and cook for one minute, over low heat, stirring frequently.
Add the water, green peas, and roasted red pepper, and bring to a simmer over medium high heat.
Stir, cover, and cook over low heat until the rice and orzo are tender, 15 to 20 minutes.
Remove from the heat, fluff the grains, and blend in the parsley.
Let stand for 5 to 10 minutes before serving.
Variation: Add 1 15-ounce can of chickpeas to pilaf. Add 5 oz bag baby spinach.
Variation: Make double recipe with 1 16 ounce box orzo and 1 cup white basmati rice, use 6 1/4 cups boiling water; double remaining ingredients.
