Moroccan Apricot Chickpeas

Ingredients
2 medium onions, cut into thick slices
6 large cloves garlic, sliced
20 oz chopped butternut squash (or 1 1/4 to 1 1/2 pounds)
1 large sweet potato, chopped
2 large broccoli crowns, chopped
1/2 cup dried apricots, diced (or mix of apricots, prunes, figs, dates)
1/4 cup Kalamata olives, chopped
1 large can chickpeas (28 oz)
1 tbsp Moroccan seasoning (from Spices Inc)
1/2 cup to 1 cup vegetable broth
Salt and pepper
Recipe Steps
Preheat a large pot over medium heat.
Add onions and garlic. Cover and cook until soft.
Add butternut squash, sweet potato, and 1/2 cup vegetable broth. Cook for 15 minutes.
Add broccoli, dried fruit, and Moroccan seasoning. Cook for an additional 15 minutes, adding more broth if needed.
Add olives and chickpeas. Cook for 5 minutes.
Serve hot with couscous, lemon wedges, fresh parsley, etc.
