Marsala Sauce

So good! Great recipe from Vegetarian Meat and Potatoes. Really good on tofu, seitan, portobello mushrooms, and Brussels sprouts!

Ingredients
1 Tbsp olive oil
4 large shallots, quartered.
1 cup vegetable broth
1/4 cup Marsala wine
1 Tbsp soy sauce
1/2 tsp dried thyme
1/2 tsp tomato paste
1 1/2 Tbsp cornstarch dissolved in 2 Tbsp water
8-10 ounces small button mushrooms, halved or quartered
Salt and pepper
Recipe Steps
Cook mushrooms in a small skillet. Set aside.
Heat olive oil in the same skillet. Cook shallots until slightly caramelized, about 10 minutes. Set aside.
Add broth, wine, soy sauce, thyme, and tomato paste. Heat almost to a boil.
Whisk in cornstarch mixture and boil, whisking for 1 minute until sauce is thickened.
Add shallots and mushrooms.
Serve over "meat" or vegetable of choice.
