Ingredients
1 very large carrot (1/2 lb), spiralized or grated (can use other veggies-summer squash, sweet potatoes, etc)
1/2 to 1 cucumber, chopped or spiralized
1 package sesame seaweed crunchies
1 clementine, chopped
5 chopped, dried apricots (or other dried fruit)
1/2 to 3/4 cup peas or edamame
1 crumbled rice cake (optional)
Sprinkle of toasted sesame seeds
Sprinkle of sliced almonds or honey roasted peanuts
2 T soy sauce (LS)
1 T toasted sesame oil
1 T water
1 T seasoned rice vinegar
1/4 tsp chili garlic sauce
Sprinkle garlic powder
Recipe Steps
Mix all salad ingredients together in large bowl (carrots through almonds)
Mix all dressing ingredients together (soy sauce through garlic powder)
Right before serving, combine dressing and salad.
Serve immediately.
