Ingredients
3 Tbsp oil (or 2 Tbsp oil, 1 Tbsp water)
2 Tbsp rice vinegar
1 Tbsp soy sauce
1/2 Tbsp sugar
1 Tbsp grated ginger
2 oz carrots, peeled and roughly chopped
1 oz yellow onion, roughly chopped
1/8 tsp salt
1/4 tsp sesame oil
Recipe Steps
Cook carrots and onion for 2 minutes in microwave (covered) with 2 Tbsp water.
Combine remaining ingredients in large cup.
Add carrots and onions to cup.
Process until smooth with immersion blender.
Serve immediately.
Yield is approximately 1/2 cup.
