Greek Tofu Scramble

Ingredients
1 large package medium firm tofu (1 1/2 lbs, Sunrise brand)
1 red onion, sliced
3 cloves garlic, chopped
1 small jar roasted red peppers (about 2 peppers)
1 can artichoke hearts
1 package baby spinach
1/4 cup Kalamata olives
1 -2 Tbsp capers
Seasoning
1 Tbsp Penzey's Greek seasoning mixed with 2 Tbsp water
1/2 tsp turmeric
1/4 cup nutritional yeast
Recipe Steps
Cook onion in large skillet until soft.
Add garlic and remaining vegetables, excluding spinach.
Cook for 10 minutes.
Add tofu by crumbling into skillet. Cook for 10-15 minutes, until browned.
Add spinach. Cook until wilted.
Add spice mixture, turmeric, and nutritional yeast. Cook for 5 minutes.
Season with extra Greek seasoning, roasted garlic powder, or Penzey's Forward.
Note: Can add extra vegetables, such as broccoli, cherry tomatoes, or peppers.
