General Tso's Tofu

Ingredients
Tofu
2 Tbsp soy sauce
1 Tbsp apple cider vinegar
10 ounces firm tofu (275 g), cubed
6 tbsp cornstarch
Stir fry vegetables of choice
Sauce
6 tbsp tamari or soy sauce
6 tbsp apple cider vinegar
6 tbsp vegetable stock or water
4-6 tbsp cane, coconut or brown sugar
2 tbsp cornstarch
1/8 tsp cayenne powder
Recipe Steps
Make the tofu.
Mix the soy sauce and vinegar in a bowl until well combined.
Add the tofu cubes and let rest for at least 5 minutes.
Drain the tofu and transfer 1/3 of the tofu cubes to a freezer bag with 2 tbsp of cornstarch and toss to coat.
Repeat this step with the rest of the tofu and cornstarch. Add more cornstarch if needed.
Bake the tofu on parchment paper in a 350 degree oven for 20-30 minutes.
Make the sauce by mixing all ingredients until combined.
In a large skillet, stir fry vegetables until crisp tender. Set aside.
Cook the tofu for 1 to 2 minutes.
Add the sauce to the skillet with the tofu and cook until it thickens, stirring frequently.
Serve tofu with stir fried vegetables.
