Ingredients
2 large sweet potatoes, chopped.
1 large onion, chopped
1 red pepper, chopped
1 tbsp chili powder
1 14.5 oz can black beans
1 14.5 oz can refried black beans
1 5 oz bag baby spinach or kale
1 35 oz jar mild chunky salsa
1 recipe corn tortillas (use recipe on masa harina bag; rolled into large sheets and cooked)
Garnishes-cilantro, scallions, avocado, shredded "cheese", tomatoes, pico de gallo, etc
Recipe Steps
Preheat oven to 400 degrees.
Place sweet potatoes, onion, and red pepper on large baking sheet. Sprinkle with chili powder.
Roast for 1/2 hour, or until vegetables are tender and browned.
Mix vegetables in large bowl with beans, spinach, and tomatoes.
Place 1/4 cup salsa in the bottom of 13 x 9 inch pan.
Place 1 large tortilla sheet on top of sauce.
Cover with a layer of vegetables.
Top with a small amount of salsa and another tortilla sheet.
Repeat layers, ending with a tortilla sheet.
Top with a thick layer of salsa.
Cook, covered for 1/2 hour.
Uncover and cook for an additional 10-15 minutes.
Serve warm, topped with chopped cilantro, scallions, diced avocado, shredded cheese, chopped tomato or pico de gallo, etc.
