Perfect for Thanksgiving! Especially if you don't like making pie crust. Adapted from Chocolate Covered Katie.

Ingredients
1 tsp pumpkin pie spice
2 tsp cinnamon
1/2 tsp salt
2 tsp baking powder
1/3 cup white whole wheat flour
1/3 cup brown sugar
1 15-ounce can of pumpkin puree
1 cup nondairy milk
1 tsp egg replacer or 1 Tbsp ground flaxseed
2 1/2 tsp vanilla extract
Recipe Steps
Preheat oven to 400 degrees and grease a 10 inch round cake pan.
Combine first 7 ingredients in a large bowl.
In a separate bowl, combine all wet ingredients with the egg replacer or flaxseed.
Combine the wet and dry ingredients.
Pour into pan and bake for 35 minutes.
Allow to cool completely.
Refrigerate, uncovered for 6 hours to set.
