Ingredients
1 cup diced, dried apricots
1 cup water
4 Tbsp vegan butter
1 yellow onion, chopped
1 Tbsp fresh rosemary, minced
2 tsp fresh sage, minced
8 cups dried, crumbled corn bread
1/4 cup parsley, minced
2 cups warmed vegetable broth
Recipe Steps
Combine apricots and water in a saucepan. Bring to a boil. Let stand 10 minutes.
Melt butter in large saute pan.
Add onion, cook about 5 minutes until tender.
Add herbs, saute 1 to 2 minutes.
Add apricots and liquid, simmer 4 to 5 minutes until most of liquid is evaporated.
In large bowl, combine corn bread, onion mixture, parsley, and vegetable stock
Bake 1 1 /4 hour at 325 degrees.
