Ingredients
1 cup coconut milk
1 cup water
1 cup rice (basmati or jasmine, soaked for 1/2 hour, if necessary)
1/2 onion, chopped finely
1 clove of garlic minced
1 tsp of butter
Salt to taste
Recipe Steps
Preheat oven to 350 degrees F
Melt butter in oven proof sauce pan
Add onion and garlic and sauté for a few minutes until onion is soft
Add rice and sauté for a minute
Add the coconut milk and water and bring to a boil and season generously with salt
Once boiling, remove from heat, put the lid on the pot and place in the oven and bake for approx. 30 minutes or until rice is done
Once done remove from the oven fluff and serve.
