Chickpea and Sweet Potato Curry

Ingredients
1 tsp oil
1/2 to 3/4 tsp cumin seeds
3/4 cup finely chopped onion, red or white
3 cloves garlic, chopped
1 1/2 inch knob ginger, grated
1 tsp coriander
1/2 to 1 tsp garam masala or curry powder
1/2 tsp turmeric
1/4 tsp cinnamon
1/4 tsp black pepper
1/4 tsp cayenne
2 medium tomatoes, chopped
1 can chickpeas, or 1 1/2 cups chickpeas
1 1/2 cups chopped sweet potatoes
2 cups water (or 1 cup water mixed with 1 cup coconut milk)
3/4 tsp salt
2 cups baby spinach
1 tsp lemon juice
Paprika, cilantro
Recipe Steps
Heat oil. Add cumin seeds. Cook for 1 minute.
Add onion, garlic, ginger. Cook for 5 minutes.
Add remaining spices. Cook for 30 seconds.
Add tomatoes. Cook 4-5 minutes.
Add chickpeas, sweet pototoes, water, salt. Cover and cook for 15-20 minutes.
Add spinach and lemon juice.
Reduce heat to medium low and cook for 5 minutes.
Garnish with paprika and cilantro.
