Ingredients
4 oz soy curls
2 cups hot water
2 Tbsp tamari
1 shallot, diced
2 cloves garlic, diced
2 tsp smoked paprika
1 tsp onion powder
1/2 tbsp apple cider vinegar
1/2 cup BBQ sauce
1 cup cooked quinoa
1 cup cooked chickpeas (optional)
1 cup cherry tomatoes, halved
1/2 cup pickles, chopped
1/2 red onion, sliced
1 avocado, chopped
1 large bag baby spinach
Additional BBQ sauce, for salad dressing
Optional salad veggies-red pepper, corn, cucumber, scallions, crunchy corn, etc
Recipe Steps
Soak soy curls in water and tamari for 10 minutes.
Drain and dry well.
Cook garlic and onion in large saute pan.
Add soy curls and seasonings.
Cook for 8-10 minutes until browned.
Add vinegar and BBQ sauce.
Cook until thicky and sticky.
Mix all salad ingredients in large bowl.
Add soy curls.
Top with extra BBQ sauce.
