Amazing muffins, especially when made with freshly ground wheat berries! (Adapted from a recipe on Inspired Taste)

Ingredients
4 tablespoons canola oil
1 1/2 cups flour (from 2/3 cup soft white wheat berries)
1/4 cup dark brown sugar sugar
1 teaspoon baking powder
1 teaspoon baking soda
1/4 teaspoon sea salt
1/2 tsp cinnamon
2 large ripe bananas, mashed with a fork (about 1 cup)
1 vegan egg
1/2 teaspoon vanilla extract
1 to 3 tablespoons water or milk, as needed
1/2 cup raspberries, 1/2 cup blueberries
Recipe Steps
Preheat the oven to 350 degrees F.
Whisk the flour, sugar, baking powder, baking soda, cinnamon, and salt in a large bowl.
Stir the berries into the dry ingredients.
In another bowl, whisk the canola oil, mashed banana, vegan egg, and vanilla until blended.
Add the banana mixture to the bowl with the dry ingredients.
Stir just until combined. Do not overmix.
If the batter seems too thick or dry, stir in a tablespoon or two of water or milk.
Fill muffin cups with batter.
Bake for 20 to 25 minutes.
