Autumn Seitan and Vegetable Tagine

Ingredients
2 sweet onions, chopped
4-6 cloves garlic, chopped
8 oz seitan, chopped (preferably homemade)
2 large carrots, chopped
1 bunch golden beets, chopped (about 6 medium)
8 fingerling potatoes, thickly sliced
1-2 sweet potatoes
18 dates, cut in half or left whole (or use a mixture of dates, prunes, apricots)
4-5 cups chopped beet greens or spinach
3-4 cups vegetable broth
Spice Mix
2 tsp coriander
1 tsp cumin
1 tsp turmeric (scant)
2 cinnamon sticks
salt and pepper (about 1 tsp each*)
sprinkle of cayenne, Aleppo pepper, and paprika
Recipe Steps
Saute onions in large pot until soft.
Add garlic and seitan. Cook until browned.
Add remaining ingredients.
Bring to a gentle simmer. Cook, covered for 20 minutes.
Uncover and stir.
Continue to simmer, partially covered, for another 25-30 minutes.
Let sit 10 minutes before serving.
Garnish with toasted pistachios, harissa, greens, preserved lemon, etc.
