Cardamon Rice

Delicious Indian rice dish! Adapted from The World Vegetarian Cookbook.

Ingredients
10 oz basmati rice
2 oz vegan butter
6 green cardamoms, split open at the top
1 tsp black cumin seeds
1 tsp salt
18 fl oz (500 ml) water
Recipe Steps
Wash the rice, soak in cold water for 1 to 1.5 hours. Drain well.
Melt the vegan butter over low heat. Fry the cumin and cardamom seeds for 1 minute.
Add the rice. Stir and fry for 3 minutes. Adjust heat to low. Stir and fry for another 2-3 minutes.
Add the salt and water and mix well. Bring to a boil, cover the pan, and simmer for 12 minutes.
Remove from the heat and leave the pan covered for 10 minutes before serving.
