This is our favorite recipe for Greek Salad! So fresh, simple, and delicious. Adapted from the World Vegetarian Cookbook.

Ingredients
2 tomatoes
1/2 green pepper, cored and coarsely chopped
1/4 cucumber, coarsely chopped
2 celery sticks, finely sliced
1 tsp finely chopped fresh basil
A few crisp lettuce leaves
4 oz diced vegan feta cheese or tofu feta
16 black olives, pitted
Dressing
4 T olive oil
2 T lemon juice
1 clove garlic, crushed
Large pinch of oregano
Salt and freshly ground pepper
Recipe Steps
Cut each tomato into 8 pieces and place in a large bowl. Add the pepper, cucumber, celery, and basil.
Mix the dressing ingredients together and pour over the vegetables.
Arrange a few lettuce leaves on a serving plate. Pile the salad on top, followed by the vegan cheese and olives.
