Ingredients
8 oz plain flour (can use gluten free flour)
2 oz vegan butter
1/2 tsp salt
2 1/2 fluid oz water
Filling Ingredients
1 lb potatoes
2 T cooking oil
1/2 tsp black or white mustard seeds
1 tsp cumin seeds
2 dried red chilies, coarsely chopped
1 onion, finely chopped
1-2 fresh freen chilies, coarsely chopped and seeded
1/2 tsp ground turmeric
1 tsp ground coriander
1 tsp ground cumin
1 tsp salt
1 T fresh cilantro, chopped
Recipe Steps
Boil the potatoes.
To make the pastry, add the butter and salt to the flour and rub in well. Add the water and mix to a soft dough. Knead until the dough feels soft and velvety.
Divide the pastry into 10 balls. Press it into a flat cake. Roll each cake into a 4 inch circle and cut in two. S
Make the filling. When the potatoes are cooked allow them to cool, then peel and dice them.
Heat the oil in a large frying pan. Add the mustard seeds. As soon as they start crackling, add the cumin seeds, chilies, and onion. Fry until the onions are soft. Add the ground spices. Stir quickly, then add the potatoes and salt.
Reduce heat to low. Stir and cook until potatoes are mixed with the spices.
Remove from heat and stir in cilantro. Cool thoroughly.
To fill the samosas, moisten the straight edge of the pastry with a little warm water. Fold in half to make a cone and press the edges together firmly.
Fill the cones with the filling, leaving a 1/4 inch border at the top. Moisten the top edges and press together.
Bake in a 350 degree oven for 15-20 minutes, or until well browned.
