8 cups finely sliced red cabbage
3/4 cup apple juice or apple cider
1 tsp salt
1/2 cup raisins
3 Tbsp apple cider vinegar
Black pepper, to taste
Caraway seeds, to taste
Recipe Steps
Combine cabbage, apple juice, and salt in a large pot.
Cover, bring to a boil, adjust heat to maintain a gentle simmer.
Cook 15 minutes.
Add raisins and vinegar.
Cover and simmer until cabbage is tender, an additional 15 minutes.
Taste and adjust seasonings.
Serve hot.
