Ingredients
2 cups cornmeal
2 tsp baking powder
3/4 tsp salt
1 vegan egg
1 cup water (or soymilk)
1/4 cup (or less) oil for frying
Recipe Steps
Whisk together dry ingredients in one bowl. Whisk together wet ingredients in liquid measuring cup. Stir wet and dry ingredients together.
Heat oil in pan over medium heat. Ladle 1/4 cup batter into skillet. The edges will sizzle and become crispy.
Cook cakes until bottoms are brown and bubbles form on top and sides, 2 to 3 minutes. Turn and brown the other side, 2 to 3 minutes.
Serve immediately.
