Creamy Butternut Squash Mac and Cheese

Ingredients
1 Tbsp oil
1/4 cup chopped onion
2 cups starchy potato, peeled and cubed
2 cups butternut squash or sweet potato, peeled and cubed
1 1/2 cups diced carrots
2 cups veggie broth
2 1/4 cups non dairy milk (or 2 cups milk and 1/4 cup oil)
1/2 cup nutritional yeast
2 Tbsp lemon juice
1 Tbsp soy sauce
1 lb gluten free pasta
2 cups frozen peas
2 cups shredded yellow squash
Recipe Steps
Cook onion in oil for 3-5 minutes. Add remaining vegetables and 1 cup broth. Let simmer for 15 miutes until vegetables are soft.
Add remaining liquid ingredients (broth through soy sauce) to blender. Blend into smooth. Add vegetable mixture. Blend until a smooth sauce is formed.
Cook pasta. Mix with peas and shredded squash. Add "cheese" sauce to pasta.
Optional: Heat oven to 425 degrees and bake for 20 minutes.
