Ingredients
1 Tbsp oil
1/2 yellow onion, sliced
1 1/2 cups grated sweet potato
1 medium yellow squash, grated
1 red pepper, chopped
2 cups chopped spinach
2 garlic cloves, minced
1 Tbsp soy sauce
1 tsp paprika
1/4 tsp chili powder
1 Tbsp lemon juice
1 batch Savory Grits (6 1/2 cups veg broth/milk, 1 1/2 cups stoneground grits, 1/4 cup nutritional yeast)
1/2 cup non dairy milk
1/4 cup nutritional yeast
Recipe Steps
Make the grits. Bring veg broth and milk to boil. Add grits. Whisk and stir. Bring to boil. Cook 20-30 minutes until thickened. Stir occasionally. Add nutritional yeast once done cooking.
Cook onion in oil in a large pan for 5-7 minutes. Add sweet potato, squash, and red pepper and cook for another 5 minutes. Add spinach and seasonings. Cook for 2 minutes.
Remove from heat. Stir grits into vegetable mixture. Add milk and nutritional yeast.
Pour mixture into 13 x 9 inch baking dish. Bake for 30 minutes in a 350 degree oven.
