Ingredients
1 large loaf of GF bread (12 cups)
3 Tbsp ground flaxseed
2 cups non dairy milk
1/2 tsp apple cider vinegar
1 1/2 cups canned pumpkin (15 oz can)
1/4 cup brown sugar
1 Tbsp vanilla extract
2 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
1/3 cup nutritional yeast
Recipe Steps
Heat oven to 375. Grease a 13 x 9 inch baking dish.
Cut up bread into bite size pieces and place it in a large bowl.
In a glass measuring cup, mix together milk, flaxseed and vinegar.
In a large mixing bowl, combine remaining ingredients. Add milk mixture. Pour over bread.
Pour the bread mixture into the baking dish. Cover it with foil and bake 20 minutes. Remove foil and cook for 15-20 more minutes.
