Ingredients
1 1/4 cups almond milk
2 Tbsp plus 2 tsp ground flax seeds (16 g)
1/2 cup (45 g) almond flour
1 cup (85 g) oat flour
1/2 cup (65 g) millet flour
1/4 cup (30 g) brown rice flour
1 T baking powder
1/2 cup mashed bananas (120 ml) or 1/2 cup (105 g) mashed squash
1/4 cup oil
1 T vanilla extract
1 tsp apple cider vinegar
Recipe Steps
Whisk almond milk and flax seeds together. Let sit 10 minutes to thicken.
Preheat waffle iron.
Stir dry ingredients together.
Stir wet ingredients together.
Mix wet and dry ingredients, stir until just combined.
Cook waffles according to waffle iron instructions.
Variation: Swee Potato Waffles: Add 2 Tbsp sugar, 1 tsp pumpkin pie spice, reduce liquid to 3/4 cup, and increase pumpkin/sweet potato to 1 cup. Makes really good waffles!
