Ingredients
1/4 c (22g) ground flax seeds
1 cup almond milk
1 cup (130 g) millet flour
1/2 cup (45 g) oat flour
1 T baking powder
1/2 cup (45 g) almond flour
1/3 cup oil (extra virgin coconut oil, melted)
1/4 cup maple syrup
1/4 cup orange juice
1 T vanilla extract
1/2 tsp sea salt
Recipe Steps
Preheat oven to 375 degrees.
Combine flax seeds and almond milk. Set aside to thicken for 10 to 15 minutes.
Stir dry ingredients together.
Stir wet ingredients together.
Combine wet and dry ingredients, stirring until just combined.
Bake for 35 minutes.
Remove from oven and let cool for 5 minutes.
Transfer to wire rack to cool completely.
Notes-can add 1-2 cups fruit or other additions to batter, such as cinnamon or nuts and seeds. To make the muffins nut free, replace almond flour with 1/2 cup (45 g) finely ground coconut. To make the muffins lower in sugar, use juice instead of syrup.
Variation-Make winter squash muffins by adding 1 1/2 cup mashed squash to wet ingredients. Add 1 tsp freshly grated nutmeg, 1 tsp cinnamon, 1 tsp ginger, and 1/4 tsp allspice to dry ingredients. Reduce flax seeds and almond milk by half.
